Description

A 5 minute quick and super easy fresh and crisp apple broccoli salad with a sweet and spicy Korean Gochujang dressing. Perfect as a meal or as a side.

Ingredients

  • 1 broccoli (chopped)
  • 1/2 apple (sliced into slivers, matchsticks size)

Sweet & Spicy Gochujang Dressing

  • 2 teaspoon honey
  • 3 tablespoon rice vinegar
  • 1 1/2 tablespoons gochujang paste
  • 2 teaspoon sesame oil
  • nuts (optional)
  • feta cheese (optional)

Instructions

Making the Gochujang Dressing

  1. Combine all the ingredients under the Gochujang dressing  list and put aside

Assembling the Salad

  1. Chop the broccoli into bite sized pieces
  2. Julienne half an apple into slivers, matchsticks size
  3. Combine the broccoli and apple into a mixing bowl and toss it with the dressing
  4. Enjoy as a meal or as a side dish! 🙂

Notes

Don’t waste! Use the broccoli stems. They have the most crunch and flavour. If they are a bit tough and waxy, you can peel the skin with a peeler.
